Tomato & Cucumber Salad

Every summer my dad would take the tomatoes and cucumbers from his garden and create this salad. I remember coming in from being outside and eating this salad. So fresh and so cold, it was so good! Something this simple but with fresh garden ingredients makes all the difference. Tomatoes, cucumbers, and white onion tossed in Italian dressing and then chilled. Yes. It’s amazing and refreshing. I’m going to keep this post short and sweet just like the salad-easy and delicious.

Tomato & Cucumber Salad:

4 large tomatoes

2 large cucumbers

1 large white sweet onion

Wash tomatoes and cucumbers. Peel onion. Chop tomatoes and slice the cucumbers and onion like this:

Drizzle zesty Italian dressing on and toss. Place and fridge and allow to salad to chill before serving. Be aware the longer it sits in fridge the oil may start to harden. If this happens take out of fridge and allow oil to warm up and it will break down again and is good to go!

*I make my own Zesty Italian dressing. I use a packet from the store, I prefer using red wine vinegar in mine. Directions are on packet! I drizzle al I make on salad. If you but it already made, I would had half the bottle or 3/4 of bottle.
