Bang Bang Cauliflower

Today I wanted to make some skinny bang bang shrimp, but I also wanted to take a break from seafood. We eat a lot of seafood in the summer. I guess it makes us feel “beachy” and its always good to have fresh fish in the summer as a replacement to the usual beef and chicken dishes. So I looked in the fridge and found a head of cauliflower and thought why not make bang bang cauliflower? It will be healthier and meatless! Perfect combo if you ask me! The sauce I made is what I usually use with my bang bang shrimp, sometimes if I am feeling really healthy I will substitute the mayo for greek yogurt. Just a thought if your on a really healthy kick today 😉 I only made enough for two since anything breaded is usually never good saved and rewarmed from the fridge. I like breaded items to be made and eaten, not saved. Don’t we all prefer that? This is also baked not fried to help with that healthy kick you may be on!

Cauliflower Recipe:

Cauliflower- 1/2 head

Panko Bread Crumbs- 1/2 cup

Egg- 2, beaten 

Preheat oven to 400. Break apart the cauliflower into florets. Dip into egg and then into the bread crumbs. I was getting super messy doing this and crumbs seemed to want to stick to my fingers rather than the floret so take the floret by the stem, dip in the egg and then dip into the crumbs, may have to push a little hard to get a lot of crumbs.

My eggs in the picture above had not been beaten to show to use two eggs, beat together before you dip. Spray pan with non stick olive oil spray. Place florets into pan after being breaded ( or crumbed… haha).

Bake on 400 for 20 minutes. 

Bang Bang Sauce:

Sriracha- 2 tablespoons ( only add 1 first and see if that is your heat preference before you add a second one!! We like it a little hotter in our house)

Mayo- 2 tablespoons ( just mayo is what I use) or use greek yogurt

Sweet Chili Sauce- 1 tablespoon

Make sauce while the cauliflower is cooking. Place the sauce into zip lock bag and put back into fridge.

*Green onion- I had green onion in the fridge which I love on bang bang shrimp so I chopped some up to serve on top of my bang bang cauliflower. You don’t have to but it sure is good! 

Once ready to plate, cut small edge off of ziplock bag with sauce, squeeze in a fast line up and down the cauliflower. Sprinkle with onion and enjoy!
