Key Lime Pie

I have been known to make a good key lime pie ever since high school. My dad used to request it and I would happily make it for him since he did always say it was the best he ever had. This weekend, I decided to make one on the whim to have for dessert. My husband loves key lime pie so I knew he would be happy for a surprise dessert. After eating the pie he did say it was the best one I have ever made so far! WOW! It was the first time I had added homemade whip cream on top of my pie along with lime zest sprinkled on top. I guess you can’t go wrong with homemade whip cream on anything. I even used a scoop of the left over whip cream in my coffee the next morning…it was amazing. I like to serve my pie chilled so you definitely want to make yours a day in advance so it can chill in the fridge overnight. I hope this recipe will be one you add to a special dinner or just to make on the whim for a surprise. We are always up for a dessert surprise around my house.

Nellie & Joe’s Key West Lime Juice (the first pie layer recipe is on the back of this bottle, can’t go wrong with the recipe but I will type it out just in case) :

9″ graham cracker crust

14 0z of sweet condensed milk

3 egg yolks ( white not used)

1/2 cup of Nellie & Joes Key West Lime Juice

Directions for first layer:

Combine milk, egg yolks and lime juice. Blend until smooth. Pour filling into pie shell and bake on 350 for 15 minutes. Allow to cool for 10 minutes.

THEN I MAKE A SECOND LAYER WITH THESE INGREDIENTS:

1 cup of sour cream, 1/2 cup of sugar, and 1/4 teaspoon of vanilla. Stir until mixed well. Pour on top of first layer and bake in oven on 350 for another 15 minutes. Allow to cool for 10 minutes until refrigerated.

Before I served it I topped it off with my Homemade Whip Cream Recipe:

1 pint carton of heavy whipping cream ( Organic Valley is the brand I use)

1/4-1/2 cup of powdered sugar (personal preference on sweetness) 

1/4 teaspoon of vanilla

Mix together on high (around 3-4 minutes) in mixer until it begins to look “fluffy” and peaks begin to form.

Top on the entire pie and add lime zest if desired. And a dollop in your coffee 🙂
