Tomato Herb Bake

IMG_2467.JPGA few week ago I was able to try out HelloFresh.com, a food delivery service with fresh ingredients. I was actually really impressed with all the ingredients and recipes. Whenever you want a break from the grocery store for the week and have an easy clean up from dinner, this service is the answer! This was one of my favorite meals from the week, and I have made it numerous times since. It is great as a main dish ( a good break from meat… hello Meatless Monday!) or as a side to a dish. I really think the feta made it even better!


Israeli Couscous -1 cup

Thyme-1/4 oz ( if I don’t have any available it’s still a great dish without, or you could do basil instead)

Asparagus-1 bunch

Sliced Almonds- 1 oz

Garlic- 2 minced cloves

Grape tomatoes- 4 oz, ( I added more, about half a container of Grape tomatoes)

Scallions ( green onion) – 2 ( I did 4)

Feta- 1/2 cup

Vegetable stock- 1/4 cup ( I use chicken stock )

Butter- 1 Tbsp ( I really like the brand Kerrygold)

Olive Oil- 1 tsp


Preheat Oven to 450. Mince garlic, cut an inch from the bottom of asparagus off and then cut the asparagus into 3- inch pieces. Cut tomatoes in half. Strip thyme from stem, and chop leaves. Bring stock to boil and 3/4 cups of water to a low simmer in pot.

Roast veggies: Use a large backing dish, toss garlic, asparagus, tomatoes, half of the time, and drizzle of olive oil with a sprinkle of salt and pepper. Cook for 20 minutes. Toss halfway through.

Cook Couscous: After the veggies have been roasting for 10 min, heat butter in pot on medium heat, add the couscous and thyme ( or basil) , stirring for 1 minute. Add the warm stock and reduce to low heat for 10 minutes or until tender.

Add scallions-Thinly cut the scallions and separate the whites from the greens. Cut and throw away the bottom white of the scallion. When 5 minutes are left on the couscous, put the whites from scallions in.

Almost done!- Fluff couscous with a fork, and season with salt and pepper ( remember go by your taste buds!! always taste as you go)! Put couscous in bowl, serve veggies on top, then add sliced almonds, feta, and greens from scallions!
